Nearly a year, the team of Regional Association of Municipalities "Maritza" is working on the project "Virtual Maritza – Merich Cuisine", № CB005.1.23.017, financed under the Interreg-IPA CBC Bulgaria-Turkey Programme 2014-2020. To date, on the Bulgarian side, the two studies have been carried out as project activities on the topic: "Traditional recipes from Haskovo Region" and "Local places with traditional cuisine in Haskovo Region". The purpose of the studies is:
- to explore the traditional regional culinary culture and traditional cuisine in Haskovo Region;
- to collect information on the most popular traditional dishes offered in restaurants in Haskovo Region.
In the studies the experts conclude that the specifics of the regional culinary culture in Haskovo overlap and participate in the formation of the Thracian cuisine. Dishes of Eastern Rhodope and Aegean culinary are also typical for the region. In Haskovo region, besides good culinary traditions, there is a special attitude towards the wine. As one of the areas in the forefront of the wine producers in Bulgaria, wine occupies serious positions in the local lifestyle and traditions. From the study of traditional culinary recipes, it can be concluded that in Haskovo cuisine there are dishes that are typical of the region only and are present only in the typical traditional cuisine in Haskovo. It is noteworthy the strong influence of Turkish cuisine, resulting in the formation of enduring culinary traditions of the region. The heavy fat stew, kebabs, gyuvetch and oriental desserts typical of Turkish national cuisine have found a place in the regional culinary traditions of Haskovo region. In addition to the elements of Turkish cuisine, the rich variety of different types of meat (pork, chicken, mutton, lamb, beef) is also impressed, which emphasizes cattle breeding as the main livelihood of part of the population in the region. Haskovo region, comprising areas of Thrace, Sakar Mountains and the Eastern Rhodopes, is diverse with different tastes and traditional foods. Thracian cheese, bumbar, gyuzleme, shashlik, Rhodopean kolak and patatnik focus the attention of the researchers to these areas. Interesting are the findings of the study of local places with traditional cuisine for the most popular foods by municipalities. It turns out that in Svilengrad the most popular traditional meals in the loal food establishments isThracian cheese, in Lyubimets - prazenik, in Harmanli - bumbar /pork with leeks/, in Ivaylovgrad the most popular traditional meals are stuffed peppers with corn, in Mineralni bani - Banska salad, in Madzharovo - drusan miller's kebab, in Topolovgrad - beans in a pot, in Dimitrovgrad - maslenitsa and puska, in Haskovo - Thracian gyuvetche and Rhodopean kolak. The most interesting recipes found after these studies are to be presented through a mobile app, which is expected to be ready in March next year.
